Boba drink mango passion fruit

Inspired by his recent trip to Asia, Diego created a unique bubble drink using our tapioca, mango pulp, and passion fruit. Available in both alcoholic and non-alcoholic versions, this exotic drink is sure to delight your guests. Try this recipe and bring a touch of Asian magic to your party!
INGREDIENTS
- 1/2 cup Tapioca Pearls Large QF Quality Food
- 450g Mango pulp Alphonso without added sugar QF Quality Food
- 170 gr Passion fruit pulp QF Quality Food
- 5 glasses of water
- bubbles*
- ice cubes
- lime
- sugar
*Use interchangeably: non-alcoholic champagne / tonic / sparkling water / sprite
A METHOD OF PREPARING
- Add tapioca to boiling water and cook for 20 minutes, stirring occasionally to prevent the pearls from sticking together. The water-to-pearl ratio should be 10:1.
- Remove the tapioca from the heat and set aside to soak for 12 hours. After this time, rinse the tapioca balls and transfer them to a pot.
- Cover them again with 2 cups of water and 1 cup of mango pulp, add sugar, and cook for about 5 minutes, until the tapioca balls become translucent. Drain and rinse with cold water.
- Transfer the tapioca to a container and pour in the remaining mango pulp. Stir and chill.
- Place 2-3 tablespoons of the bubbles in a tall, long-stemmed glass. Add ice, about 8-10 cubes per glass. Top with your favorite bubbles.
- Top with 2-3 tablespoons of passion fruit pulp. Garnish the drink with a lime slice and insert a bubble tea straw.
