Christmas mango cake

INGREDIENTS
Cake:
- 400 gr Alphonso mango pulp without added sugar QF Quality Food
- 170 g soft butter
- 100 g of
- 3 eggs
- 2 teaspoons of baking powder
- 350 g wheat flour
Frosting:
- 1 cup of powdered sugar
- 3 tablespoons of orange or lemon juice
A METHOD OF PREPARING
1. Place the soft butter and sugar in a bowl and beat until fluffy – you can do this using a mixer.
2. Gradually add the eggs, mixing constantly until combined (don't worry if the mixture separates – this is normal)
3. Sift the dry ingredients into the mixture, pour in the pulp and mix gently with a spatula.
4. Pour the batter into a baking pan lined with parchment paper. No greasing is required.
5. Bake for about 50 minutes at 180 degrees Celsius, top and bottom, until a stick comes out dry.
6. Meanwhile, make the icing. Mix the powdered sugar with the juice for a few minutes until smooth.
7. Pour over the finished cake and decorate with fruit.
